What would you say is the lowest temperature that multi vitamins, and dietary supplements can be stored at to keep them fresh, like if you keep them in the refrigerator , so as not to let them over heat at room temperature on a summer day? Is it ok to keep supplements and vitamins in the refrigerator?

It's ok, but not necessary. Unless the label states to keep refrigerated, no need.
